Buckwheat Coconut Bread
/Buckwheat Coconut Bread
dairy-free, gluten-free, vegan
makes 6 medium size pieces
ingredients:
- 1/2 cup buckwheat flour
- 1/2 cup coconut flour
- 1/2 cup coconut milk
- 5 eggs OR 5 chia seeds eggs (1 tbsp. chia + 3 tbsp. water = 1 chia seed egg)
- 2 tbsp. coconut oil (plus more for coating the pan)
- 1 tsp. baking soda
- 1/2 tsp. cinnamon
- 1/4 tsp. nutmeg
- 1/2 tsp. sea salt
- 7 drops liquid stevia (optional)
method:
- Preheat oven to 350 degrees
- In a small bowl whisk eggs OR make up chia seed eggs and add your coconut oil, stevia and salt and whisk together as best you can
- In a medium sized bowl add flours, coconut milk, baking soda and spices
- Add the small bowl of ingredients to the medium bowl of ingredients and mix together well
- Lightly grease a loaf pan with coconut oil
- Add the mixture to the loaf pan
- Bake for about 30 mins or until edges start to gain some color
- Allow to cool before slicing
- Top with your favorite nut butter, ghee, or anything else you enjoy!
