Buckwheat Coconut Bread

dairy-free, gluten-free, vegan 

makes 6 medium size pieces

ingredients:

  • 1/2 cup buckwheat flour
  • 1/2 cup coconut flour
  • 1/2 cup coconut milk 
  • 5 eggs OR 5 chia seeds eggs (1 tbsp. chia + 3 tbsp. water = 1 chia seed egg)
  • 2 tbsp. coconut oil (plus more for coating the pan)
  • 1 tsp. baking soda
  • 1/2 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1/2 tsp. sea salt
  • 7 drops liquid stevia (optional)

method:

  • Preheat oven to 350 degrees
  • In a small bowl whisk eggs OR make up chia seed eggs and add your coconut oil, stevia and salt and whisk together as best you can
  • In a medium sized bowl add flours, coconut milk, baking soda and spices
  • Add the small bowl of ingredients to the medium bowl of ingredients and mix together well
  • Lightly grease a loaf pan with coconut oil 
  • Add the mixture to the loaf pan
  • Bake for about 30 mins or until edges start to gain some color
  • Allow to cool before slicing
  • Top with your favorite nut butter, ghee, or anything else you enjoy!
