/Coconut & Cinnamon Roasted Sweet Potatoes

makes 3-4 servings
ingredients:
- 3 Medium Sized Sweet Potatoes, skin removed and cut into about 1 inch cubes
- 2 tbsp. coconut oil or ghee, melted
- 1 tbsp. coconut sugar
- 1/2 tsp. cinnamon
- 1/4 tsp. nutmeg
- 1/2 tsp. sea salt
method:
- Preheat oven to 375 degrees
- Place cubed potatoes into a medium sized bowl and add the rest of the ingredients, mix everything together well
- Transfer to a covered sheet pan and spread potatoes out the best you can
- Bake for about 25 mins or until golden and soft when tested with a fork
